Lebanese Grilled Chicken

Ingredients:

  (Serves 2)
- Chicken pieces (e.g. drumsticks, thighs, leg sections x4)
- Juice of 1 lemon
- Garlic cloves x4
- Sumac spice (1 heaped teaspoon)
- Olive oil (1-2 tbsp)
- Salt (1-2 teaspoons)

Method:

  1. Remove all skin and fat from chicken pieces and discard.
  2. Use a knife to make deep slits in the chicken, all the way through to the bone.
  3. Combine remaining ingredients in a large bowl.
  4. Marinate the chicken in the fridge from 2 hours to overnight.
  5. Grill until cooked thoroughly, turning once.
